What is it for:

Pasteurizers are equipment used to heat and then quickly cool liquids, such as food and beverages, to specific temperatures. How it works:

The pasteurization process involves heating the liquid to a specific temperature for a set period of time, followed by rapid cooling. There are different methods and types of pasteurizers, each adapted to different needs and products. The main pasteurization methods are:

Slow Pasteurization (or Classic Pasteurization):

The liquid is heated to a temperature between 60°C and 85°C for a longer period, usually between 30 minutes and several hours. This method is most common in products such as juices and wines.
Rapid Pasteurization (or Flash Pasteurization):

The liquid is heated to a higher temperature, usually between 70°C and 90°C, but for a short period of time, typically a few seconds. It is then quickly cooled. This method is suitable for heat-sensitive products such as beers and some dairy products.
UHT (Ultra High Temperature) pasteurization:

The liquid is heated to ultra-high temperatures, usually above 135°C, for a very short period of time, usually less than 5 seconds. This method is used for products that require a long shelf life without refrigeration, such as UHT milk.
Types of Pasteurizers:

Tube Pasteurizers: They use tubes to transfer the liquid, allowing efficient temperature control.

Plate Pasteurizers: Enclose the liquid in thin layers between metal plates, providing rapid heat transfer.

Tank or Basin Pasteurizers: Liquid is heated in large tanks and then cooled in a continuous process.

Spray Pasteurizers: The liquid is sprayed with hot water, exposing the surface of the product to heat.

Specific Pasteurizers for Dairy Products: Designed to meet the specific needs of dairy products, such as milk.

Pasteurizers for Juices and Beverages: Adapted to process heat-sensitive liquids, such as juices and beverages.

The choice of the type of pasteurizer will depend on the characteristics of the product to be processed and the specific needs of the pasteurization process. The objective is to reach the temperature necessary to eliminate or reduce the presence of pathogenic microorganisms, maintaining the quality of the final product.
