A suitable mill should process the opening of the malt grain, separating the pulp (endosperm) from the husk, leaving the husks intact. The preservation of the whole husks is necessary for the formation of a filter bed, an excellent aid in the clarification process.
Common mills were developed to grind the grain whole, including the husk. The Harmo Mill malt mill has a stainless steel hopper that feeds the grain directly to two textured rollers; the malt is then crushed, expelling uniform granules of endosperm and completely intact husks.
Unlike other mills, the rollers of the Harmo Mill malt mill always remain parallel, respecting the chosen adjustment (opening), ensuring that no malt grain passes through without being properly crushed, allowing the brewer to obtain excellent milling, regardless of the size or type of malt used. Correct milling has a direct and rapid influence on improving physicochemical transformations, yield, clarification, and the quality of the final product.

Mashing, or brewing, is the mixing of brewing raw materials, milled malt, together with water at a controlled temperature under a pre-established scale program, with the purpose of solubilizing the substances in the malt, to achieve the highest final degree of fermentation, which is the percentage of fermentable sugars in the wort extract. Boiling is the boiling of the wort to give it biological, chemical, and colloidal stability. This stage also involves the inactivation of enzymes, sterilization of the wort, protein coagulation, extraction of bitter and aromatic compounds from hops, evaporation of excess water and undesirable aromatic components, and the formation of substances that constitute the aroma and flavor.
Once the boiling is complete, the wort undergoes a stage to remove protein, resin, and tannin complexes ("TRUB"), which must precipitate and settle at the bottom of the tank. This is propelled by centrifugal force that vigorously rotates the wort ("Whirlpool"), leaving it completely clear.

• 2 valves for wort outlet: 1st for primary wort and 2nd for cooling.
• 1.1/2” stainless steel SMS connections.
• Solenoid valve for steam injection control.
• Stainless steel hydraulic wort ejector to rotate the mixture and precipitate insoluble solids.
• Protective barrier installed at the base of the tank to prevent suction of the “Trub”.

The tanks that make up the Wort Production Unit are: Hot Water Generator, Platform, Mashing/Cooking/Whirlpool Tank, Filtration/Clarification Tank, as specified below, all constructed of AISI 304 stainless steel. 304 with a brushed finish and thermal insulation with fiberglass. The filtration tank has a unique visual level control that allows for safe operation without the risk of cloudiness during clarification. In the wort cooking operation, an annular collector prevents the return of condensate from evaporated gases to the wort, thus preventing it from being contaminated by undesirable flavors. A work platform allows for positioning. |
